This is my all time favorite choice of greens for a classic beans and greens meal! Dandelion greens pack more of a bitter punch than some other varieties of greens... but to those of us who love them, we *really* love them! They stand up well to other strong flavors--I always put something spice and/or something smoked in with them. They also work well as a substitute for spinach in one of those classic wilted greens bacon dressing salads.
