Bunched Greens-Bok Choy

Also known as Chinese cabbage.  Bok Choy has a crisp, watery texture and a peppery, nutty flavor.  It's delicious cooked in a soup or stir fry.  Sliced thinly it makes a delicious substitute for cabbage in coleslaw.
