What is celtuce, you ask? It's a variety of lettuce grown for mostly for its stem. It's crisp and delicious and watery and nutty--if you like water chestnuts, you'll probably like celtuce! It's great raw in salads (jazz up any kind of slaw!), but can also be stir fried.
To prepare: Peel the rind from the stem, cut into slices or matchsticks, and toss into a salad or stir fry!
